INGREDIENTS

FOR 4 PEOPLE

125 grams head cheese,

1 small shallot, 1 tbsp olive

oil, 1 lemon, 1 tsp quality

mustard, 1 tsp mayo,

1 big pickled gherkin,

1 tsp capers, 1 tbsp

chopped parsley, pickles,

1 thin slice of bread.

BEER PAIRING

Brugge Tripel has a pervading

smoky flavour, a high alcohol

percentage per volume and a

full-bodied flavour. A strong

head cheese and some pickles

are more than a match for

this strong beer. The Bapas

will accentuate the phenolic

(smoky-clove) character in this

beer and it will provide some

magical taste sensations.

RECIPE

METHOD

1. Pre-heat the oven grill. Cut

the sandwich diagonally in

4 triangles. Use the grill to

make these triangles nice and

crispy. Remove from oven.

2. Cut the head cheese into

small cubes. Dice these cubes

a few more times using a

knife and place in a pot.

3. Peel the shallot. Cut the

gherkin and shallot into small

pieces and add to the meat.

4. Cut the capers a few times

with a knife and add to the

head cheese.

5. Now add the parsley, olive

oil, mayo, a few drops

of lemon juice, salt and

pepper. Mix everything with

a fork. Taste and season if

necessary.

6. Add some head cheese and

pickles to the triangles and

garnish with some apple pieces.
